Tonight I drove to my parents' new house! A different house, with all the familiar furniture in...
very strange. Good house though. Can't wait to see it in the light.
My mum has offered to help me with the cooking whilst I am here which will be great as I might get some new ideas. What with it being Easter weekend, we had to plan out all the food til Tuesday, when the shops will be open properly again. Luckily my mum is good at making lists and planning menus, so we are all set for the next few days, and everyone will be eating the same as me - more or less.
So, today at home I was finishing off bits of food... started with left over almond bake from yesterday for breakfast. Then caramelised fennel soup (from the Eat Well Feel Well book) for lunch ( I def need to have more soups on the go so I don't have to eat the same two for a week!). An apple as a snack and some cheese. Then for dinner I made Michael and I a small bit of lentil soup, followed by mushrooms cooked in nutmeg with spinach, followed by chicken salad, followed by oranges. Wow! That should have filled me up. But by the time I had driven 3 hours to my parents I was feeling a bit wobbly... so quickly baked an almond flour, coconut and honey mix to see me through.
My yoghurt maker is on the go downstairs...
My mum worries that by cutting out carbs there is a vital bit of nutrition I am missing... I may go back to the hospital to run the diet past them and see what they think.
It' s hard to impose this diet when you are a guest. It makes you feel fussy and neurotic... and this is only at my parents' house! But the idea of not taking so many drugs and not getting moved up to the next level of drugs is going to keep me going. It's only two years after all... and if it works... when I am 70 I will be thanking myself now.
It's 1am... very tired now.

Hey there ! Yeah it's probably not easy when you're a guest (even at your parents' house) but like you said, it's so worth it ! If people really care about you, then they'll understand. It's cool that your mum will cook SCD recipes with you ! My two closest friends know I started this diet and they are eager to make SCD-compliant recipes with me, which I so look forward to.
ReplyDeleteThe fennel soup sounds delicious, I will definitely try it, love this recipe book. Do you have any other SCD recipe book ? If so, which ones ? I skim the SCD blogs and save the recipes I wanna try on my computer :)
As for carb intake, I wouldn't worry too much. You've got fruit and honey, I think it's plenty ! Unless you're losing a lot of weight, then I would get the diet checkd out. My husband also wanted me to see a dietician, but for now I don't feel I need it. I will begin to take SCD-friendly vitamins though, because I still don't have a lot of variety in my diet.
As for me, this is day 5, I feel great, went back to work yesterday and hoping everything will remain OK. I don't eat much now, carrot, squash, chicken soup, any kinds of meat or fish, homemade Jello - but this is for a couple of weeks, after that I will be adding food to my menu much more rapidly. Like almond flour... so I can make some sweets and things that look like bread or pancakes. Last night I had a dream where I ate (nonlegal) cookies, and I my mind I was thinking : spit it out ! Spit it out ! LOL

I slept well though still only 5 hours... steroids are crazy.
Do you belive that if you follow this diet for 2 years you could be cured? It would be amazing if that was true.
